SunstarTV Bureau: Mutton Kofta curry is a simple and finger-licking cuisine for meat lovers. This recipe has all the traditional flavour of old-fashioned hand touch but it’s made in an easier and more approachable way. Especially non-veg koftas are prepared either with mutton or chicken mince with the addition of spices. Mutton keema is shaped into balls and cooked in a scrumptious bhuna masala of fried onions and tomatoes.

Ingredients:
- Mutton (600gram)
- Brown onion (4 big sizes)
- Yoghurt (200 gram)
- Cashew paste (100gram)
- Fresh cream (1cup)
- Ginger garlic green chilli Paste.
- Maize (piece)
- Cloves (8)
- Black paper corn (10)
- Cinnamon (1 stick)
- Black cardamom (2)
- Red chilli powder (1 tablespoon)
- Turmeric powder (1 teaspoon)
- Salt as per taste
- Nutmeg powder (1 pinch)
- Coriander powder (1 teaspoon)
- Fresh mint leaves
- Some grated coconut paste
- Desi ghee
Preparations :
Step-1. First marinate the mutton with half of ginger garlic green chilli paste, salt, red chilli powder, some brown onion and turmeric powder.
Step-2. Then set the marinade in the refrigerator for 1 hr.
Step-3. Now prepare a curd mix with curd, red chilli powder, turmeric powder, coriander powder and mint leaves. Our curd mix is done.
Step-4. Now make small size ball out of the marinade and shallow fry them and make sure the outer layer is fried enough to soak up the flavours and doesn’t break when slow-cooked in gravy.
Step-5. Now let’s make the gravy, heat up the pan then add some ghee into it.
Step-6. Then add all the dry spices, cashew paste, remaining curd then grated coconut paste, turmeric powder, chilli powder and remaining brown onion.
Step-7. Cook until it thickens up and form gravy to give structure to our meatballs. Then put the meatballs or koftas in it and let it simmer in the gravy for at least 15 minutes or until the recipe is 95% done.
Step-8. Then taste if the seasonings are perfect or add salt if required. Add the nutmeg powder and fresh cream then stir it for 30 seconds.
Step-9. Now turn off the heat and garnish to end up our preparation. Enjoy this north Indian delicacy with some naan or rice.
