Manchow soup is a popular fusion soup recipe of Indo-Chinese cuisines. It is a hot and spicy soup made from mix vegetables with both vegetarian and non vegetarian version. Choice of vegetables are simmered with spices like ginger, garlic and chili and then seasoned with salt, pepper and soya sauce and served with crisp fried noodles. Small cubes of chicken pieces are simmered with vegetables and herbs like ginger, garlic, chili, and then seasoned with salt, pepper, egg and soya sauce for chicken Manchow soup recipe.
All you need to do is boil the chicken breast and then cut it into small cubic size pieces and use the water as stock water in the soup. After that heat some oil in a pan and saute ginge, garlic in high flame. When it turns light brown add the chopped tomatoes and saute further for one minute till the tomatoes become translucent.If you are using raw chicken then add them now and saute stirring continuously in medium flame heat.
Now add the chopped carrots, cabbage mushroom and bamboo shoots and saute further. Add green chili paste and mix well. Then add 1 cup water and simmer for a while and add salt and white pepper powder.
Simmer the soup for 1 more minute and add 1 teaspoon corn flour mixed water (slurry).
See the thickness of the soup, if required pour half teaspoon more corn flour slurry.
You can use chicken stock or vegetable stock instead of water for the recipe.
Now add the dark soya sauce into the soup and mix well. Adjust the colour of the soup and if required add a little more soya sauce.
Let it simmer for a while and then pour 2 teaspoon of beaten egg slowly into the soup by the side.
If you are using boiled chicken, then add it now after pouring the beaten egg.
Simmer and sprinkle some chopped coriander leaves and pour it into a bowl. Now your soup is ready to be served hot with fried noodles.
